Quesadilla means cheesy thing, and the cheese is the glue: it melts and holds the chicken and vegetables between the halves of tortilla. Cut into quarters, eaten with your fingers.

- 150 gChicken breast
- 30 gCheddar, grated
- 10 gJalapeño
- 20 gOnion
- 30 gPeppers
- 5 gCanola oil (1 tsp)
- 15 gSoured cream (1 tbsp)
- Cumin, paprika, coriander, salt
How to make it
- Fry the diced chicken with the onion, pepper and spices in the oil for five minutes.
- Tortilla into the pan, top one half with the cheese, chicken and jalapeño, fold it over.
- Fry for two minutes a side until the cheese runs, cut into quarters, serve with soured cream and coriander.
