Crêpes are pancakes without baking powder: thin, soft, done in a minute a side. With peanut butter and berries they become a breakfast that lasts until lunch.

Ingredients

  • 60 gPlain flour
  • 100 gEggs (2 piece)
  • 150 mlMilk
  • 5 gCanola oil, for the pan (1 tsp)
  • 30 gPeanut butter (2 tbsp)
  • 80 gRaspberries
  • 5 gMaple syrup (1 tsp)
  • Pinch of salt

How to make it

  1. Whisk the flour, eggs, milk and salt smooth and let it stand for ten minutes.
  2. Pour a thin layer of batter into the hot, lightly oiled pan, swirl it, cook for a minute a side.
  3. Spread the crêpes with peanut butter, fold them, serve with the berries and maple syrup.

One tip

The batter should be as thin as cream. Too thick and you get pancakes.
