Menemen is the Turkish breakfast where the eggs set in soft tomatoes and peppers. There are two camps, stirred or left whole. Here: gently stirred.

- 200 gEggs (4 piece)
- 200 gTomatoes
- 100 gPointed peppers
- 50 gOnion
- 10 gOlive oil (1 tbsp)
- Pepper flakes, salt, pepper, parsley
How to make it
- Fry the onion and pepper strips soft in the oil for five minutes.
- Add the diced tomatoes, season with the pepper flakes and salt, reduce until almost no liquid is left.
- Crack the eggs over the top and stir slowly over low heat until they just set. Parsley over it.
One tip
Take it off the heat while the eggs still glisten. They carry on cooking in the pan.
