- 100 gEggs (2 piece)
- 80 gBlack beans, drained
- 80 gSalsa
- 50 gAvocado (½ piece)
- 5 gCanola oil (1 tsp)
- Coriander, lime, salt
How to make it
- Toast the tortillas in a dry pan for a minute a side and keep them warm.
- Warm the beans with half the salsa.
- Fry the eggs in the oil, keeping the yolks soft.
- Top the tortillas with the beans, egg, the rest of the salsa and the avocado, coriander and lime over it.
One tip
For more heat, fry a chopped jalapeño with the beans.
