Kongguksu is the Korean summer dish: noodles in ice-cold, velvety soya milk with sesame. It sounds unfamiliar and tastes nutty and fresh. The salt goes in at the table.

Ingredients

  • 100 gThin wheat noodles
  • 300 mlSoya milk, unsweetened
  • 15 gSesame seeds, toasted (1 tbsp)
  • 50 gEgg, hard-boiled (1 piece)
  • 50 gCucumber
  • 30 gTomato
  • Salt, ice cubes

How to make it

  1. Blend the soya milk with the sesame until fine and chill it.
  2. Cook the noodles and rinse them ice cold.
  3. Noodles into the bowl, soya broth over them, arrange with cucumber strips, tomato and half an egg, salt at the table.

One tip

A few ice cubes in the broth are no mistake. It should be genuinely cold.
