The soup lives on the broth: onion and ginger are charred first, then steeped with star anise and cinnamon for three quarters of an hour. The meat goes in paper thin and raw.

Ingredients

  • 800 mlBeef stock
  • 60 gRice noodles
  • 120 gBeef steak, very thinly sliced
  • 40 gBean sprouts
  • 40 gOnion
  • 15 gGinger
  • 15 gSoy sauce (1 tbsp)
  • 10 gLime
  • Star anise, cinnamon stick, Thai basil, coriander, chilli

How to make it

  1. Halve the onion, slice the ginger, char both in a dry pan.
  2. Steep the stock with the onion, ginger, star anise and cinnamon for 45 minutes, then strain it and season with soy sauce.
  3. Soak or cook the rice noodles as the packet says, then drain.
  4. Slice the beef against the grain as thinly as you can, easiest when it is slightly frozen.
  5. Noodles into the bowl, raw beef on top, pour the boiling broth over: the meat cooks in the bowl.
  6. Sprouts, herbs, chilli and lime on top.

One tip

Put the beef in the freezer for 20 minutes and you can slice it paper thin.
