Poke without raw fish: the prawns are fried briefly, everything else stays raw. Mango brings the sweetness, sesame oil and soy sauce the rest.

Ingredients

  • 70 gSushi rice, raw
  • 120 gPrawns, peeled
  • 80 gMango
  • 50 gEdamame
  • 60 gCucumber
  • 30 gRadishes
  • 15 gSoy sauce (1 tbsp)
  • 5 gSesame oil (1 tsp)
  • 5 gSesame seeds (1 tsp)

How to make it

  1. Wash the sushi rice, cook it and let it cool with a splash of vinegar and a pinch of sugar.
  2. Fry the prawns in a hot pan for two minutes a side, then salt them.
  3. Dice the mango, cucumber and radishes, blanch the edamame briefly in salted water.
  4. Rice into the bowl, everything in sections on top, soy sauce and sesame oil over it, sesame on top.

One tip

If you use frozen prawns, thaw them in the fridge and pat them dry, otherwise they will not fry.
